Taste can always easily blur the boundaries between people, and Chaoshan Style Lion’s Head Goose Bistro Shanghai Community Store is a place “born from taste and settle from relationship”. The manager has no intention to make it a feast brand, but only to bring the local taste of Chaoshan to a corner of Shanghai, and make it a taste that can be appreciated by both friends and neighbors.
鹵味通常是筵席的前菜,潮汕鹵水也是潮汕最具代表性的風味之一,鮮香味輕,鹵味之中最出名的莫過於鹵鵝,受到各地食客偏愛。潮味獅頭鵝上海店主理人對潮汕味道向來情有獨鍾,他走訪潮汕街巷,終於尋覓到最偏愛的潮味獅頭鵝,並說服潮汕這家店的老板將本地味道帶到上海。
Marinated food is usually the appetizer of a banquet. Chaozhou marinade is one of the most representative flavors of Chaoshan, which is tasty, aromatic and light. The most famous marinated dish is marinated goose, which is favored by customers from all over the world. The manager has always been fond of Chaoshan flavors. He explored the streets of Chaoshan and finally found his favorite Lion’s Head Goose and convinced the restaurant owner to bring the local flavor to Shanghai.
01 尋覓 Search
潮味獅頭鵝上海社區店主理人找到貨殖設計,並邀請其對空間進行整體設計,在與貨殖設計主理人袁豪傑的溝通中,設計師提煉出“味道遷徙”成為空間敘事的基調。
The owner of the Shanghai Community Store contacted Huozhi Design and invited them to design the space as a whole. In the communication with Yuan Haojie, the manager of Huozhi Design, the designer refined “flavor migration” to become the keynote of the space’s narrative.
小而精的社區餐飲店則需要對菜式的味道把控更加專注,不能因遷徙上海就改變了原本的本地味道,才能牢牢抓住食客的胃和心。
Small and fine community restaurant needs to be more focused on the flavor control of the dishes and stick to the original local flavor, in order to firmly attract the diners.
味道被精心把控,空間也不例外,文化質地被融進了空間之中,貨殖設計將海派文化加以簡化提煉,如屏風,百葉窗元素,運用在就餐場景中,一方麵豐富上海本地人對餐廳的文化歸屬感,另一麵,不留痕跡的顯露出潮汕的人文內涵,空間中的原創藝術家作品,繪畫、木雕元素,則成為潮汕文化在這一方空間的出口。
Flavor is carefully controlled, and space is no exception. The cultural texture is integrated into the space. Huozhi Design simplifies and refines Shanghai culture, such as screen and shutter elements, which are used in the dining scene. On the one hand, it enriches the Shanghai local people’s sense of cultural belonging to the restaurant, and on the other hand, it reveals the humanistic connotation of Chaoshan without leaving traces. The original artists’ works, paintings and wood carving elements in the space have become the showcase of Chaoshan culture in this space.
02 語言 Language
盡管對美食的準備需要精確與關注,但鬆弛感卻幾乎滲透在店鋪空間的每一個角落。
While the preparation of the food requires precision and attention, a sense of relaxation permeates almost every corner of the store space.
一些看似漫不經心的材質,被沿用進空間中,原本廢棄金屬水管被作為裝飾性元素,成為一種獨特的鬆弛語言,木材料的溫潤感與金屬的硬朗感相互調和,凹凸石材牆麵可對光線進行漫反射,柔和空間氛圍,諸如此類,一係列材料的組合令豐富且鬆弛的情緒在空間蔓延開來。
Some seemingly careless materials are used in the space: the original discarded metal water pipe is used as a decorative element, becoming a unique relaxed language; the warmth of the wood material harmonizes with the hardness of the metal; concave and convex stone walls can diffuse light, soften the atmosphere of the space, and so on; the combination of a range of materials spreads a rich and relaxed mood through the space.
03 關係 Relationship
社區店也成為周邊居民的社交地,傳統與現代均能夠在此地找到平衡的對照。
The community store has also become a social place for the residents in the neighborhood, where tradition and modernity can be balanced.
象征傳統中式的開放圓桌,與現代隱私性更好的卡座方桌,包容了不同的文化內裏。為營造更舒適的就餐屬性,燈光為此做了一些調整,照度偏暗,讓一些原本緊繃的情緒得以舒展,對話、獨處都能夠更加鬆弛,讓時間在這裏走的緩慢一些,畢竟美食常需要用心品嚐和消化。工作日的繁忙過後,華燈初上,燈光明暗相間,這裏又成為朋友小聚的選項,幾杯佳飲,一疊鹵味,即可一掃平日的俗擾。
The open round table, which symbolizes traditional Chinese style, and the booth square table with better privacy in modern times, accommodate different cultures. In order to create a more comfortable dining atmosphere, the lighting has been adjusted a little to make it dim. It allows some of the otherwise tense emotions to stretch out, allows conversations and solitude to loosen up a bit more, and allows time to move a bit slower here – after all, it takes time to savor and digest food with care.
04 遷徙 Migration
上海是一個融彙中西的地方,新與舊,快與慢均能找到相應落腳點,這歸因於上海本身包容的特質。潮汕文化是嶺南文化的一脈,在地文化滋養地方美食的生長,而美食跟隨人的腳步遷徙,潮味獅頭鵝從南到北,從潮汕來到上海遷徙落地,如同兩種顏料,糅合,塗抹,成為新的色彩。
Shanghai is a place where the East meets the West, where the old and the new, the fast and the slow can all find a place to settle down, thanks to Shanghai’s inclusive qualities. Chaoshan culture is a part of Lingnan culture. The local culture nourishes the growth of local food, and the food follows the migration of people. Chaoshan Style Lion’s Head Goose migrates from the south to the north and from Chaoshan to Shanghai, just like the two pigments, blending, spreading, and becoming a new color.
